🛒 Ingredients (Serves 3–4)

300gm wild caught salmon

30g garlic, finely chopped

30g ginger, finely chopped

2 eschallots, chopped
-
1/2 head broccoli, chopped (include some finely chopped stalk too - it's good for you!)
Pantry staples (not included in recipe kit):

1 cup basmati rice, rinsed

700ml chicken broth or stock

2 tbsp soy sauce or tamari

🍽 Instructions

Place a shallow casserole dish with lid over medium heat. Toast rinsed rice, garlic and ginger, stirring for 2 minutes.
- Add chopped broccoli, chicken broth and soy sauce, stir and bring to a simmer (2-4 minutes).

Add salmon skin-side up. Place lid on and simmer for 7 minutes.

Break up the salmon, leaving nice chunks intact.
- Stir through shallots. If necessary, simmer for a few more minutes until liquid is evaporated.
- Serve in bowls with your favourite toppings.
