These black chia seeds are grown by the Salvetti family, third-generation farmers based in Tolga on the Atherton Tablelands in Far North Queensland. Farming under the name Australian Superfoods NQ, the Salvettis cultivate nutrient-dense wholefoods in rich volcanic soil, using no synthetic inputs or artificial fertilisers.
Chia (Salvia Hispanica) belongs to the mint family and grows as an annual herb reaching up to 1.75 metres in height. The plant produces striking purple and white flowers that mature into seed pods, from which the chia seeds are harvested.
With a mild, nutty flavour and a fine texture, chia seeds suit a wide range of sweet and savoury applications. When soaked in liquid, they form a thick gel, making them particularly useful for thickening, binding, and retaining moisture in both cooking and baking.
Chia seeds absorb liquid readily and swell into a gel, adding structure, moisture, and nutrition to a broad range of dishes. A few ways to use them:
Chia seeds are naturally high in dietary fibre, plant-based omega-3 fatty acids, and essential minerals including magnesium and phosphorus. Because they are whole and unprocessed, they retain their full nutritional value whether eaten raw, soaked, or cooked.
Store in an airtight container in a cool, dry place away from direct sunlight. Refrigeration is not required but can extend shelf life in warmer climates.
The Salvetti family has farmed the Atherton Tablelands since the 1950s, beginning with maize, grass seed, and cattle before transitioning toward premium, chemical-free food crops suited to the region's volcanic soil and tropical climate. Is this chia seed raw and unprocessed?
Yes. The seeds are harvested, dried, and cleaned on-farm but are otherwise unprocessed. No roasting, toasting, or irradiation is used.
Is it certified organic?
Not certified, but grown without synthetic chemicals. The farm operates on low-input, chemical-free principles with a focus on soil health and crop integrity.
Can I use chia seeds as an egg replacer?
Yes. Combine 1 tablespoon of chia seeds with 3 tablespoons of water and allow to sit for around 10 minutes until a gel forms. This mixture can substitute one egg in most baked goods.
Are these Australian grown?
Yes, 100%. These seeds are grown by the Salvetti family in Tolga, Queensland. No imported seed is used.
