From: Sovereign Foods

Harvested at peak maturity on Stewart Neilson's certified organic orchard in Greens Creek, Queensland, these raw Australian macadamias are air-dried on-farm to bring out their naturally creamy texture and rich, buttery flavour. With minimal processing and nothing added, they're a genuine expression of what a well-grown macadamia can be, whether enjoyed as a snack or used as an ingredient in the kitchen.

About the Macadamias

Macadamias are one of Australia's most celebrated native foods, and these offer a rare opportunity to enjoy them with exceptional freshness and traceability. After harvest, the nuts are dehusked, air-dried, cracked, graded, and packed entirely on the farm. This careful, low-intervention process allows the kernels to develop a pleasantly firm texture while holding onto the naturally buttery character that makes fresh Australian macadamias so distinctive.

Whether eaten by the handful, folded into baked goods, scattered through salads, or blended into homemade nut butter, these macadamias reflect the quality that comes from attentive growing and restrained processing.

About the Grower

Stewart Neilson and his family operate Ecodamia at Greens Creek, near Gympie in Queensland, under certified organic management. The orchard is run with a focus on soil health, biodiversity, and long-term land stewardship, using natural systems in place of synthetic fertilisers or pesticides.

Every stage of production takes place on the farm. From harvesting and dehusking through to air-drying, cracking, grading, and packing, nothing leaves the property until it's ready for the bag. This on-farm approach provides complete traceability and ensures the nuts reach customers at their freshest.

Why We Love Them

  • Grown, processed, and packed on a single certified organic Australian farm
  • Air-dried to develop a delicate crunch while preserving their creamy texture
  • Rich, buttery flavour with nothing added
  • Versatile for snacking, baking, and cooking
  • Full traceability from orchard to bag

Culinary Uses

These raw macadamias are delicious straight from the bag, but they're equally useful in the kitchen. Stir them through homemade muesli or granola, toss them through salads, bake them into biscuits and slices, blend them into pesto or creamy sauces, or process them into fresh macadamia butter at home. Their rich texture also makes them a natural fit on cheeseboards and grazing platters.

Storage

Store in a cool, dry place. After opening, refrigeration is recommended to maintain freshness, particularly during warmer months.

Frequently Asked Questions

Are these truly raw?
Yes. These macadamias are air-dried rather than roasted, which preserves their natural flavour while giving the kernels a pleasantly crisp texture.

Why are they firmer than some fresh macadamias?
After harvest, the nuts are air-dried to reduce moisture and improve keeping quality. This season's crop has been cured a little longer, resulting in a more satisfying bite while retaining the naturally buttery character of the nut.

Can I roast them at home?
Absolutely. These raw kernels are well suited to home roasting if you prefer a deeper, toasted flavour.

Where are they grown?
Every macadamia is grown, harvested, processed, and packed on Stewart Neilson's certified organic orchard at Greens Creek, Queensland.
